Quality Sparkling Wine – Classic Method Extra Brut
TERROIR: The vineyard is located in the hilly region of Oltrepò Pavese, facing east, at an altitude of 220 meters. The soil is mainly clay, and the vineyard is organically farmed with natural ground cover. The vines, trained in the spur-pruned cordon system, have an average age of 15 years. The planting density is 5,500 vines per hectare.
HARVEST AND VINIFICATION: The grapes are hand-harvested in early August to preserve their freshness. After a gentle pressing, the primary fermentation takes place at a low temperature in stainless steel tanks. Tirage is carried out in May and June, marking the start of the second fermentation in the bottle using the Classic Method. The wine then matures on its fine lees for 36 months, developing complexity and structure before disgorgement.
APPEARANCE: Intense straw yellow with golden highlights
EFFERVESCENCE: Fine and persistent perlage
NOSE: Sweet notes of chamomile and freesia blend with the distinct aroma of freshly baked bread crust.
PALATE: The sapidity is pleasantly pronounced, with mineral notes balanced by delicate flavors of kumquat and walnut, finishing with ripe William pear.
PAIRING: Perfect with raw fish, shellfish, delicate risottos, and soft cheeses.
SERVING: Best served in a half-flute glass at 8°-10°C.
